DISTINCTIONS: The wine is in the TOP 20 ranking of the prestigious specialized wine and gourmet magazine ДиВино.
What is orange wine?
Orange wine is a wine made from white grapes using a special technology.
The key is in the skins of the white grapes. While white wines are made by separating the grape skins from the grape juice, which ferments independently to become wine, in orange wines the skins of the white grapes are left to macerate* and ferment together with the grape juice.
The skins give the orange wine its richer color (yellow, ochre, orange), flavor and aroma.
The skins also contain tannins, which give it its characteristic flavor. You could say that this is a white wine made using the technology of red wine.
Producer: Villa Melnik
How is it made?
Our orange wine is made from 100% Sauvignon Blanc. The grapes are only from our own plantations 5km from the town of Melnik, from the 2016 harvest. The 2015 harvest was 60% Sauvignon Blanc and 40% Ceratsuda, but it is sold out.
The skins (leek) and grape juice underwent cold maceration for a day and a half, after which the wine fermented together with the lees for about 10 days.Subsequently, the wine was separated into a stainless steel vessel, where it rested with the lees for a month. It was bottled in early February.
The series is limited to about 1100 bottles.
Characteristics: The wine has a deep yellow color. It has an enviable depth and richness of aromas with accents of quince, citrus and peach, as well as notes of musk and fern. Its taste is fresh, slightly salty with prominent tannins, a characteristic slight astringency due to contact with the skins and a finish that leaves a lasting impression of flowers and lemon.
